We started with two fermenters behind a carpentry workshop in Nicosia old town. Today we brew on spring water piped down from the Troodos range, malt grown on the Mesaoria plain, and a house lager yeast we have kept alive for nine years. Everything is brewed, conditioned and kegged on the island — nothing is contract-brewed abroad.

Our first beer and still half of everything we brew. Soft water, Cypriot pilsner malt, sixty days cold.
4.7% ABV — 18 IBU — 330ml / keg

Cloudy, gentle and spiced with coriander from the Paphos hills. Brewed March to October.

Deliveries arrive cold, on the day promised, and someone from the brewery actually answers the phone. That is rarer than good beer.

Refrigerated vans run twice a week to every district. Trade orders placed before Monday noon arrive by Wednesday; private cases ship within three working days anywhere on the island.
The brewhouse sits on a fenced corner plot at the far end of the Ergates Industrial Estate, off the Nicosia–Troodos road — a closed perimeter with no passing public, so entry is by booked appointment with ID left at the security gatehouse. Saturday tours run at 11:00 for groups of six to twelve.
Keep bottles and kegs between 4 and 8 degrees and drink the lagers within four months of the packaging date on the neck. Barrel-aged releases will keep improving for two years in a dark cellar.
Brewed with the same house yeast and stopped cold before fermentation finishes, so it keeps the malt body instead of tasting of wort. Available in bottle from June to September.
